Meat Loaf in Bacon

1 packet bacon, 4 tbs milk, 75 g white breadcrumbs, 450 g minced meat (or 300 g minced meat and 150 g liver), 1 onion, peeled and finely chopped, pinch thyme, pinch parsley, 1 tsp Worcestershire sauce, salt and pepper , 2 eggs, beaten

Grease a small loaf tin and line with the bacon. Mix milk and breadcrumbs together and leave to soak. Mix minced meat and onion together with a fork, add the herbs, sauce and seasoning and mix well. Add the milk and breadcrumbs, then the beaten eggs and combine all together. Press into the tin and squeeze out air bubbles. Flatten the surface. Cover with foil and place in a moderate oven (180° C - gas No. 4) for 1 - 1 1/4 hours or until cooked through. Turn out and cool, then serve decorated with sliced stuffed olives on a bed of lettuce and tomato wedges. 

Mum did this recipe for our picknick on the British Day 2002 in Hamburg. She used minced meat and liver. It tasted really good, but the original recipe is as above.
